Instructions

  1. Step 1
    Cook 3 cups pasta according to package directions until al dente. Drain and cool completely.
  2. Step 2
    Cube 1 cup cooked chicken breast and crumble 1/2 cup cooked turkey bacon.
  3. Step 3
    Halve 1 cup cherry tomatoes. Thinly slice 1/2 cup red onion. Prepare 1 cup chopped romaine lettuce, 1/2 cup shredded cheddar cheese, and 1/2 cup cubed toasted bread or croutons.
  4. Step 4
    In a large bowl, mix cooled pasta, chicken, turkey bacon, tomatoes, red onion, cheddar cheese, and 1/2 cup mayonnaise. Stir until all ingredients are well coated.
  5. Step 5
    Cover and refrigerate for at least 2 hours (or preferably overnight) to allow flavors to meld.
  6. Step 6
    Just before serving, gently fold in the chopped romaine lettuce and toasted bread/croutons. Serve chilled.
