Instructions

  1. Melt the Butter: In a medium microwave-safe bowl or a small saucepan over medium heat, melt the unsalted butter. If you want an extra layer of flavor, continue cooking the butter until it's light brown and smells nutty (brown butter!). Remove from heat and let it cool slightly for about 5 minutes.
  2. Combine Sugars and Butter: Pour the slightly cooled melted butter into a large mixing bowl. Add the granulated sugar and light brown sugar. Whisk vigorously for about 1 minute until well combined and smooth.
  3. Add Eggs and Vanilla: Add the whole egg, the extra egg yolk, and the vanilla extract to the butter-sugar mixture. Whisk for another 1-2 minutes until the mixture is lightened in color, thick, and well emulsified.
  4. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Make sure there are no lumps and everything is evenly distributed.
  5. Add Dry to Wet: Gradually add the dry ingredients to the wet ingredients, mixing on low speed with an electric mixer or by hand with a spatula until just combined. Be careful not to overmix!
  6. Fold in Chocolate Chips: Gently fold in your chosen chocolate chips and/or chunks until they are evenly distributed throughout the dough.
  7. Chill the Dough (CRITICAL!): Cover the bowl tightly with plastic wrap and refrigerate the dough for a minimum of 2 hours, or preferably overnight.
  8. Preheat Oven & Prep Sheets: When ready to bake, preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone baking mats.
  9. Portion the Dough: Use a 2-tablespoon cookie scoop or roll about 1.5-inch balls of dough. Place them about 2 inches apart on the prepared baking sheets.
  10. Bake: Bake one sheet at a time for 10-12 minutes, or until the edges are golden brown and crisp, but the centers are still slightly pale.
  11. Cool: Remove the baking sheets from the oven. If desired, sprinkle a little flaky sea salt on top of the warm cookies immediately. Let the cookies cool on the baking sheets for 5-10 minutes to allow them to set up.
