Ingredients
Scale
- 2 sheets of store-bought frozen puff pastry
- 4–5 Granny Smith apples
- 2–3 Honeycrisp, Gala, or Fuji apples
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- Pinch of nutmeg
- 1 tablespoon fresh lemon juice
- 2 tablespoons melted butter
- 1 beaten egg (for egg wash)
- Splash of water or milk (for egg wash)
- Coarse sugar (optional, for sprinkling)
Instructions
- Prepare the Apple Filling: Peel, core, and dice the apples into small, uniform pieces. In a medium bowl, combine the diced apples with the granulated sugar, ground cinnamon, nutmeg, lemon juice, and melted butter. Toss until well coated and let cool.
- Thaw and Prepare Puff Pastry: Retrieve the puff pastry sheets from the refrigerator and unfold them on a lightly floured surface. Roll out each sheet to a slightly larger rectangle, about 10×12 inches.
- Cut the Pastry: Cut each pastry sheet into four equal squares.
- Fill the Turnovers: Spoon about 1/4 to 1/3 cup of the apple filling onto one half of each pastry square, leaving a small border around the edges.
- Fold and Crimp: Brush the edges of the pastry square with egg wash, fold over the filling to create a triangle, and press down to seal. Crimp the edges with a fork.
- Vent and Egg Wash: Place the turnovers on a baking sheet lined with parchment paper, make 2-3 small slits on top for steam to escape, and brush with egg wash. Sprinkle with coarse sugar if desired.
- Bake: Preheat the oven to 400°F (200°C) and bake the turnovers for 20-25 minutes until golden brown.
- Cool: Transfer the baked turnovers to a wire rack to cool slightly.
- Optional Glaze: Whisk together powdered sugar with milk or cream and a splash of vanilla extract, then drizzle over cooled turnovers before serving.

Keywords: Keep your pastry cold for the best results. Don't overfill the turnovers to prevent leaks, and ensure a good seal by crimping the edges well. You can add dried cranberries or nuts for extra texture.
