Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and, if desired, peel your chosen potatoes. Cut them into consistent 1.5 to 2-inch wedges or chunks.
  3. In a large mixing bowl, combine your prepared potato chunks, extra virgin olive oil, freshly squeezed lemon juice, minced garlic, dried Greek oregano, salt, and freshly ground black pepper. Toss everything thoroughly to coat the potatoes evenly.
  4. Transfer the seasoned potatoes to a large, shallow baking dish or roasting pan, ensuring not to overcrowd the pan.
  5. Pour the vegetable or chicken broth (or water) into the bottom of the baking dish around the potatoes.
  6. Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
  7. After 30 minutes, carefully remove the foil and stir or flip the potatoes gently. Increase the oven temperature to 425°F (220°C).
  8. Return the uncovered dish to the oven and continue baking for another 45-60 minutes, stirring or flipping every 15-20 minutes until the potatoes are golden brown and crispy.
