- 1 pound ground beef
- 1 pound bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
- 1 cup milk
- 1 package (16 oz) elbow macaroni
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 cup green onions, chopped (for garnish)
Instructions
- In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes, stirring occasionally.
- Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain. Leave about 2 tablespoons of bacon grease in the skillet.
- Add the diced onion to the skillet and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef, seasoning with salt, black pepper, smoked paprika, onion powder, and garlic powder. Cook until browned, about 6-8 minutes, breaking up the meat as it cooks.
- Drain any excess fat and stir in the crispy bacon and BBQ sauce. Mix well and set aside.
- While the meat mixture cools, bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes.
- Drain the macaroni and return it to the pot. Stir in the sour cream and milk until well combined.
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the meat mixture with the creamy macaroni. Stir in half of the cheddar and mozzarella cheese until evenly distributed.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Top with the remaining cheddar and mozzarella cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole sit for about 10 minutes before serving.
- Sprinkle chopped green onions over the top before serving.
- Scoop out portions and serve warm, pairing with a side salad or garlic bread.
