  • 1 lb lean ground beef (90/10 or 93/7)
  • Taco seasoning (store-bought or homemade)
  • 1 can chili beans (pinto beans in mild chili sauce)
  • 1 can diced tomatoes with green chilies (like Rotel)
  • Frozen or canned corn
  • 1 cup cooked rice (white or brown, optional)
  • 12 cups shredded cheese (Mexican blend, sharp cheddar, or Monterey Jack)
  • 1 onion, diced
  • 23 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C). Slice each bell pepper in half lengthwise and scoop out the seeds and membranes.
  2. In a large skillet or Dutch oven, heat a little olive oil over medium-high heat. Add the ground beef and cook until fully browned, about 5-7 minutes. Drain excess grease.
  3. Reduce heat to medium. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute.
  4. Add taco seasoning, canned chili beans (undrained), diced tomatoes with green chilies (undrained), and corn to the skillet. If using, stir in cooked rice. Simmer for 5-7 minutes.
  5. Arrange the halved bell peppers cut-side up in a baking dish. Trim the bottoms if needed to help them stand upright.
  6. Spoon the chili taco filling into each pepper half, packing them full.
  7. Cover the baking dish loosely with aluminum foil and bake for 30 minutes.
  8. Remove the foil and sprinkle shredded cheese over each stuffed pepper. Bake uncovered for another 10-15 minutes until the peppers are tender and the cheese is melted.
  9. Let the stuffed peppers rest for a few minutes before serving.
