Instructions
- Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
- Add the rotini pasta to the boiling water. Stir gently to prevent sticking and cook according to package instructions (about 8-10 minutes) until al dente.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat for about a minute.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes until browned and cooked through.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Reduce heat to low and slowly pour in the heavy cream, stirring to combine with the beef and garlic.
- Gradually stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust thickness with reserved pasta water if needed.
- Taste and adjust seasoning with more salt and pepper, and add red pepper flakes for a kick if desired.
- Toss the drained rotini pasta into the skillet, mixing until well coated with the sauce.
- If the sauce is too thick, add more reserved pasta water, a tablespoon at a time, until desired creaminess is achieved.
- Remove from heat and serve in bowls, garnished with freshly chopped parsley.
