Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, both sugars, and cinnamon for the streusel. Cut the cold butter into small cubes and add to the dry mixture. Cut the butter into the flour mixture until coarse crumbs form. Place the streusel mixture in the refrigerator.
- In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt for the cake batter. Set aside.
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar on medium speed until light and fluffy, about 2-3 minutes.
- Beat in the room temperature eggs one at a time, mixing well after each addition. Then, beat in the vanilla extract.
- Reduce the mixer speed to low. Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the room temperature sour cream (or yogurt) in two additions. Mix until just combined.
- Pour about half of the cake batter evenly into the prepared baking pan. Sprinkle half of the chilled streusel topping over this layer of batter. Spoon the remaining cake batter over the streusel layer, then sprinkle the remaining streusel topping over the top.
- Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached. The top should be golden brown.
- Let the coffee cake cool in the pan on a wire rack for at least 20-30 minutes before slicing.
