  • 1 cup fresh blueberries
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter (for cooking)
  • Maple syrup (for serving)
  • Additional powdered sugar (for dusting, optional)

Instructions

  1. Wash the fresh blueberries under cold water and gently pat them dry with a paper towel.
  2. In a medium-sized mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy.
  3. Gently fold in the blueberries, being careful not to mash them. Set aside.
  4. Lay out the thick-cut bread slices on a clean surface.
  5. Carefully cut a pocket into each slice of bread, deep enough to hold the filling but not cutting all the way through.
  6. Stuff each pocket with a generous amount of the blueberry cream cheese filling and press the edges gently to seal.
  7. In a large mixing bowl, crack the eggs and add the milk and ground cinnamon. Whisk until well combined and slightly frothy.
  8. Optionally, add a tablespoon of sugar to the egg mixture for extra sweetness.
  9. Heat a large skillet or griddle over medium heat and add a tablespoon of butter, allowing it to melt.
  10. Dip each stuffed slice of bread into the egg mixture, coating both sides well.
  11. Place the soaked bread slices onto the hot skillet, cooking about two to three slices at a time.
  12. Cook for 3-4 minutes on one side until golden brown, then flip and cook for an additional 3-4 minutes on the other side.
  13. Transfer cooked French toast to a plate and keep warm in a low oven (around 200°F or 93°C) while finishing the remaining slices.
  14. Stack two slices on each plate for serving.
