Description

This Broccoli Salad features fresh broccoli, crunchy carrots, sweet red grapes, and savory bacon, all coated in a creamy apple cider dressing. It’s a nutritious and delicious side dish or light meal, perfect for any occasion.

Ingredients

Scale
  • 4 cups fresh broccoli florets
  • 1 cup shredded carrots
  • 1 cup red grapes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup cooked bacon, crumbled (optional)
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Wash the broccoli thoroughly under cold running water to remove any dirt or pesticides.
  2. Using a sharp knife, cut the broccoli into bite-sized florets.
  3. Peel the carrots and shred them using a box grater or a food processor.
  4. Finely chop the red onion. If too pungent, soak in cold water for 10 minutes to mellow the flavor.
  5. Wash the grapes, slice them in half, and set aside.
  6. In a medium-sized mixing bowl, add 1 cup of mayonnaise.
  7. Pour in 2 tablespoons of apple cider vinegar.
  8. Add 1 tablespoon of sugar to balance the acidity.
  9. Whisk until well combined and smooth. Season with salt and pepper to taste.
  10. In a large mixing bowl, combine the broccoli florets, shredded carrots, halved grapes, and chopped red onion. Add crumbled bacon if using.
  11. Pour the dressing over the vegetable mixture.
  12. Gently toss the ingredients together until evenly coated.
  13. Taste and adjust seasoning if necessary.
  14. Cover the mixing bowl with plastic wrap or transfer to an airtight container.
  15. Chill in the refrigerator for at least 30 minutes before serving.
  16. Transfer the salad to a large serving bowl or individual plates.
  17. For extra crunch, sprinkle some sunflower seeds on top before serving.

Notes

  • For a lighter version, you can use Greek yogurt instead of mayonnaise.
  • Feel free to customize the salad by adding other ingredients like nuts or different fruits.
