  • 1 pound Brussels sprouts, trimmed and halved
  • 4 slices of thick-cut bacon, chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon balsamic vinegar (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Rinse the Brussels sprouts under cold water to remove any dirt or debris. Shake off excess water.
  2. Trim the ends of each Brussels sprout with a sharp knife and cut them in half lengthwise. Quarter larger sprouts for even cooking.
  3. Place the halved Brussels sprouts in a large mixing bowl.
  4. In a large skillet, add the chopped bacon and turn the heat to medium. Cook slowly for 5-7 minutes until crispy and golden brown. Remove bacon with a slotted spoon and place on a paper towel-lined plate, leaving the drippings in the skillet.
  5. Add olive oil to the skillet with the bacon drippings.
  6. Add the halved Brussels sprouts cut side down, sprinkle with salt and black pepper, and cook undisturbed for 5-7 minutes until golden-brown.
  7. Stir the Brussels sprouts to ensure even cooking.
  8. Add minced garlic to the skillet and cook for an additional 2-3 minutes until fragrant, being careful not to burn the garlic.
  9. If using, drizzle balsamic vinegar over the Brussels sprouts and stir to combine. Cook for another minute.
  10. Return the crispy bacon to the skillet and toss everything together to combine.
  11. If desired, sprinkle grated Parmesan cheese over the top and let it melt slightly.
  12. Remove from heat and transfer the Brussels sprouts with bacon to a serving dish. Serve warm or at room temperature.
  13. Optionally, drizzle more balsamic vinegar or sprinkle additional Parmesan cheese before serving.
