Savor the deliciousness of Buffalo Chicken Cheesesteaks, featuring tender shredded chicken in zesty buffalo sauce, sautéed onions, and bell peppers, all topped with melted mozzarella cheese. Ideal for a quick weeknight meal or a game day snack!

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup buffalo sauce (adjust to taste)
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls or sub sandwich rolls
  • Butter for toasting the rolls

Instructions

  1. Start by prepping the chicken breasts. Pound them slightly between two pieces of plastic wrap until they are about 1/2 inch thick.
  2. In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.
  3. Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or longer for enhanced flavor.
  4. Preheat your grill or stovetop skillet over medium-high heat, ensuring it’s well-oiled.
  5. Cook the marinated chicken breasts for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  6. Brush the chicken with buffalo sauce during the last few minutes of cooking for added flavor.
  7. Remove the chicken from the grill and let it rest for about 5 minutes.
  8. In a large skillet, heat a little olive oil over medium heat.
  9. Add the sliced onions and bell peppers, sautéing for about 5-7 minutes until soft and slightly caramelized.
  10. Remove the vegetables from the heat and set aside.
  11. Shred the rested chicken into bite-sized pieces using two forks.
  12. In a large bowl, combine the shredded chicken with the remaining buffalo sauce, mixing well.
  13. Preheat your oven to 350°F (175°C).
  14. Slice the hoagie rolls open lengthwise to create a pocket.
  15. Spread a thin layer of butter on the outside of each roll.
  16. Place the rolls on a baking sheet, open side up.
  17. Fill each roll with a generous portion of the buffalo chicken mixture.
  18. Top with sautéed onions and bell peppers, then sprinkle with shredded mozzarella cheese.
  19. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly, and the rolls are golden brown.
  20. For extra bubbly cheese, switch to broil for the last 2-3 minutes, watching closely to prevent burning.
  21. Remove from the oven and let cool for a minute or two.
  22. Serve hot, garnished with extra buffalo sauce or ranch dressing on the side for dipping.
  23. Enjoy with a side of crispy fries or a fresh salad for a complete meal!

Notes

  • Adjust the amount of buffalo sauce to your spice preference.
  • For added flavor, consider adding toppings like sliced jalapeños or blue cheese crumbles.
