  • 12 lasagna noodles
  • 2 cups cooked, shredded chicken
  • 1 cup buffalo sauce (adjust to taste)
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled blue cheese (optional)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken with the buffalo sauce. Mix well until the chicken is fully coated.
  3. In another bowl, mix the ricotta cheese, egg, garlic powder, onion powder, salt, and pepper until smooth and well combined.
  4. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions (about 8-10 minutes) until al dente.
  5. Drain the noodles and rinse them under cold water to stop the cooking process.
  6. Spread a thin layer of the buffalo chicken mixture on the bottom of a 9×13 inch baking dish.
  7. Place 4 lasagna noodles over the chicken mixture.
  8. Spread half of the ricotta mixture over the noodles.
  9. Sprinkle a third of the mozzarella cheese over the ricotta layer, and half of the blue cheese if using.
  10. Repeat the layering: buffalo chicken mixture, 4 more noodles, remaining ricotta mixture, another third of mozzarella, and remaining blue cheese.
  11. For the final layer, place the last 4 noodles on top, spread the remaining buffalo chicken mixture, and top with remaining mozzarella and grated Parmesan cheese.
  12. Cover the baking dish with aluminum foil.
  13. Bake in the preheated oven for 25 minutes.
  14. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  15. Let the lasagna sit for 10-15 minutes before cutting.
  16. Cut the lasagna into squares and garnish with fresh parsley if desired.
  17. Serve hot, optionally drizzling with additional buffalo sauce.
  18. Enjoy with a side salad or garlic bread.
