Ingredients
-
2 cups cooked chicken, shredded
-
1 cup buffalo wing sauce (like Frank’s RedHot)
-
1 tablespoon butter
-
1 medium onion, thinly sliced
-
4 hoagie rolls or sub rolls
-
1½ cups shredded mozzarella cheese (or provolone or pepper jack)
-
Ranch or blue cheese dressing, for drizzling (optional)
-
Chopped green onions or parsley, for garnish (optional)
Instructions
-
In a large skillet, melt butter over medium heat. Add sliced onions and sauté until caramelized and golden, about 8–10 minutes. Remove and set aside.
-
In the same skillet, add shredded chicken and buffalo sauce. Stir to coat and heat through for 3–4 minutes.
-
Preheat your oven broiler or a griddle pan.
-
Slice hoagie rolls open without cutting all the way through and toast lightly under the broiler for 1–2 minutes until golden.
-
Stuff each toasted roll with buffalo chicken, caramelized onions, and shredded cheese.
-
Return sandwiches to the broiler for 2–3 minutes until the cheese is melted and bubbly.
-
Drizzle with ranch or blue cheese dressing if desired, and garnish with green onions or parsley. Serve hot!
Notes
-
Use sturdy hoagie rolls so they don’t get soggy from the saucy filling.
-
Adjust the spice by choosing mild, medium, or extra hot buffalo sauce.
-
Add sautéed peppers or mushrooms if you want even more flavor!
-
For extra crispiness, toast the assembled sandwiches after stuffing.
