  • 2 cups cooked chicken, shredded

  • 1 cup buffalo wing sauce (like Frank’s RedHot)

  • 1 tablespoon butter

  • 1 medium onion, thinly sliced

  • 4 hoagie rolls or sub rolls

  • 1½ cups shredded mozzarella cheese (or provolone or pepper jack)

  • Ranch or blue cheese dressing, for drizzling (optional)

  • Chopped green onions or parsley, for garnish (optional)


Instructions

  • In a large skillet, melt butter over medium heat. Add sliced onions and sauté until caramelized and golden, about 8–10 minutes. Remove and set aside.

  • In the same skillet, add shredded chicken and buffalo sauce. Stir to coat and heat through for 3–4 minutes.

  • Preheat your oven broiler or a griddle pan.

  • Slice hoagie rolls open without cutting all the way through and toast lightly under the broiler for 1–2 minutes until golden.

  • Stuff each toasted roll with buffalo chicken, caramelized onions, and shredded cheese.

  • Return sandwiches to the broiler for 2–3 minutes until the cheese is melted and bubbly.

 

  • Drizzle with ranch or blue cheese dressing if desired, and garnish with green onions or parsley. Serve hot!

  • Use sturdy hoagie rolls so they don’t get soggy from the saucy filling.
