- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/4 cup graham cracker crumbs
- 1/4 cup mini chocolate chips (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Wash the strawberries thoroughly under cold water, gently rubbing them to remove any dirt.
- Pat the strawberries dry with a clean kitchen towel or paper towel.
- Slice off the green tops of the strawberries to create a flat base.
- Hollow out the center of each strawberry using a sharp knife or a small melon baller, being careful not to cut through the bottom.
- In a medium mixing bowl, add the softened cream cheese.
- Beat the cream cheese with an electric mixer or whisk until smooth and creamy (about 1-2 minutes).
- Gradually add the powdered sugar, mixing well after each addition.
- Pour in the vanilla extract and mix until well combined.
- Add the sour cream and mix until smooth.
- If desired, fold in the mini chocolate chips.
- Fill a piping bag with the cheesecake mixture or use a spoon to fill the hollowed strawberries.
- Pipe or scoop the filling into each strawberry, packing it in well.
- Sprinkle graham cracker crumbs on top of each filled strawberry.
- Place the filled strawberries on a serving platter. Any leftover filling can be served on the side.
- Cover the platter with plastic wrap and refrigerate for at least 30 minutes.
- Garnish each strawberry with a fresh mint leaf before serving.
