- 1 ripe avocado, mashed
- 1/2 cup Greek yogurt or mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice

- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 slices of whole grain or sourdough bread
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup fresh spinach or arugula (optional)
- Butter or olive oil for grilling
Instructions
- In a large mixing bowl, combine the shredded or diced chicken with the mashed avocado. Ensure the avocado is ripe and creamy for the best texture.
- Add the Greek yogurt or mayonnaise to the bowl for creaminess and moisture.
- Stir in the Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until well combined and adjust seasoning to taste.
- Take your slices of bread and spread a thin layer of butter or drizzle olive oil on one side of each slice.
- On the unbuttered side of two slices, generously spread the chicken avocado mixture.
- Sprinkle shredded cheese over the mixture and add spinach or arugula if desired.
- Top with the remaining slices of bread, buttered side up, to create a sandwich.
- Preheat a skillet or griddle over medium heat.
- Place the sandwiches in the pan and cook for about 3-4 minutes on one side until golden brown.
- Flip the sandwiches and cook for another 3-4 minutes, pressing down gently with a spatula.
- Remove from the skillet once both sides are golden brown and cheese is melted.
- Let the sandwiches cool for a minute before slicing in half.
