Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Alternate adding the dry ingredient mixture and the buttermilk to the butter mixture, starting with a third of the dry ingredients, mixing until just combined, then adding half of the buttermilk. Repeat, ending with the dry ingredients. Avoid overmixing.
- Gently fold in the chocolate chips with a spatula.
- Divide the batter evenly among the three prepared cake pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, turn them out onto wire racks to cool completely.
- In a medium bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy (about 2-3 minutes).
- Add the vanilla extract and mix until combined.
- Gradually add the flour, mixing until just combined.
- Fold in the mini chocolate chips and add the milk, mixing until the dough is smooth and slightly sticky.
- Set the cookie dough filling aside, or refrigerate for 15-20 minutes to make it easier to handle.
