Savor the rich flavors of these Chocolate-Covered Strawberry Brownies, featuring fudgy brownies topped with fresh, chocolate-dipped strawberries. Perfect for any celebration, this indulgent treat combines the best of both worlds for a delightful dessert experience.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips
  • 1 pound fresh strawberries, hulled and dried
  • 8 ounces semi-sweet chocolate, for dipping
  • 1 tablespoon coconut oil (optional, for smooth melting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over low heat, melt the butter. Stir occasionally to prevent burning. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine melted butter and granulated sugar. Whisk until blended. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  4. In another bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in semi-sweet chocolate chips.
  7. Grease a 9×13 inch baking pan or line it with parchment paper.
  8. Pour the brownie batter into the prepared pan, spreading evenly.
  9. Bake for 25-30 minutes. Check for doneness with a toothpick; it should come out with a few moist crumbs.
  10. Let the brownies cool in the pan on a wire rack for 15-20 minutes, then lift out using parchment paper and cool completely.
  11. In a microwave-safe bowl, combine semi-sweet chocolate and coconut oil (if using). Microwave in 30-second intervals, stirring until smooth.
  12. Ensure strawberries are completely dry.
  13. Dip each strawberry into the melted chocolate, allowing excess to drip off. Place on a parchment-lined baking sheet.
  14. Refrigerate for about 30 minutes until chocolate sets.
  15. Once cool, cut brownies into squares (about 2 inches).
  16. Place one chocolate-covered strawberry on each brownie square. Drizzle extra melted chocolate over the strawberries if desired.
  17. Arrange brownies on a serving platter and enjoy!

Notes

  • Ensure strawberries are completely dry before dipping to prevent the chocolate from seizing.
  • For a decorative touch, drizzle additional melted chocolate over the strawberries after placing them on the brownies.
