Instructions

  1. Wash the apples thoroughly under cold water.
  2. Core and peel the apples, then chop them into small, bite-sized pieces (about 1/4-inch cubes).
  3. Toss the chopped apples with 1 tablespoon of granulated sugar and 1 teaspoon of ground cinnamon in a medium bowl. Set aside.
  4. In a large mixing bowl, combine the flour, baking powder, salt, 1/4 cup granulated sugar, 1 teaspoon ground cinnamon, and nutmeg (if using). Whisk until well combined.
  5. In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.
  6. Pour the wet ingredients into the dry ingredients and gently fold together. It’s okay if there are a few lumps.
  7. Fold in the prepared apple mixture until evenly distributed.
  8. In a deep skillet or heavy-bottomed pot, heat vegetable oil to a depth of about 2 inches over medium heat until it reaches 350°F (175°C).
