  • 1 scoop of protein powder
  • 1 teaspoon of baking powder
  • 2 teaspoons of ground cinnamon
  • 2 eggs
  • 1 cup of Greek yogurt
  • 1/4 cup of maple syrup or honey
  • 1/2 cup of unsweetened almond milk
  • 2 tablespoons of maple syrup or honey (for cinnamon swirl)
  • 1 tablespoon of cinnamon (for cinnamon swirl)
  • Chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with non-stick cooking spray.
  2. In a large bowl, combine 1 cup of rolled oats, 1 scoop of protein powder, 1 teaspoon of baking powder, and 2 teaspoons of ground cinnamon. Mix well to ensure even distribution.
  3. In another bowl, whisk together 2 eggs, 1 cup of Greek yogurt, 1/4 cup of maple syrup (or honey), and 1/2 cup of unsweetened almond milk until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until just combined. Don’t overmix! If you’re adding nuts, fold them in at this stage.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. In a small bowl, mix 2 tablespoons of maple syrup (or honey) with 1 tablespoon of cinnamon. Drizzle this mixture over the batter in each muffin cup and use a toothpick to swirl it gently into the batter.
  7. Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
