Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together cornmeal, all-purpose flour, baking powder, salt, and black pepper until well blended.
  3. In another bowl, whisk together milk, vegetable oil, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula, being careful not to overmix.
  5. Fold in the cooked ground beef or turkey, shredded cheddar cheese, canned corn, and diced green onions (if using).
  6. Grease a standard muffin tin with cooking spray or line with muffin liners.
