Ingredients
-
1 lb boneless, skinless chicken breasts or thighs, diced
-
1 cup long-grain white rice
-
2 tablespoons butter
-
1 tablespoon olive oil
-
1 small onion, finely diced
-
3 cloves garlic, minced
-
2 ½ cups chicken broth
-
¾ cup heavy cream
-
½ cup freshly grated Parmesan cheese
-
Salt and pepper, to taste
-
Fresh parsley, for garnish (optional)
Instructions
-
Heat butter and olive oil in a large skillet or Dutch oven over medium heat.
-
Season diced chicken with salt and pepper, then cook until browned on all sides. Remove from the skillet and set aside.
-
In the same skillet, sauté diced onion until soft and translucent. Add garlic and cook for another 1 minute until fragrant.
-
Stir in uncooked rice and toast for about 2 minutes, stirring often.
-
Pour in chicken broth and bring to a gentle simmer. Cover and cook for 15–18 minutes until rice is tender and most of the broth is absorbed.
-
Stir in heavy cream and Parmesan cheese. Return the chicken to the skillet.
-
Simmer for another 3–5 minutes until creamy and fully heated through.
-
Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
-
Toasting the rice adds a subtle nutty flavor—don’t skip it!
-
Stir in peas, spinach, or mushrooms for an easy veggie boost.
-
If the sauce gets too thick, add a splash more chicken broth or cream.
-
Great for meal prep: this dish reheats beautifully for lunches or dinners.
