  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for sautéing)
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather all your ingredients for a smoother cooking process.
  2. Slice the chicken sausage into bite-sized pieces, removing casings if using links.
  3. Dice the onion and mince the garlic.
  4. Halve the cherry tomatoes and roughly chop the spinach; set aside.
  5. In a large pot or deep skillet, heat olive oil over medium heat. Add the sliced chicken sausage and sauté for 5-7 minutes until browned and cooked through. Remove and set aside.
  6. In the same pot, add the diced onion and sauté for 3-4 minutes until translucent.
  7. Add minced garlic and cook for an additional 1-2 minutes, stirring frequently.
  8. Toss in the halved cherry tomatoes and cook for another 2-3 minutes until softened.
  9. Pour in the chicken broth and bring to a gentle boil.
  10. Add the orzo pasta, stirring to ensure it’s submerged in the broth. Reduce heat to a simmer and cook for 8-10 minutes, stirring occasionally until al dente.
  11. Once the orzo is cooked, slowly stir in the heavy cream.
