Instructions

  1. Start by bringing a large pot of salted water to a boil.
  2. Add the fettuccine pasta to the boiling water and cook according to package instructions (about 8-10 minutes) until al dente. Stir occasionally to prevent sticking.
  3. Drain the pasta in a colander, reserving about 1 cup of the pasta water. Set the drained pasta aside.
  4. In a large skillet over medium heat, add the olive oil and heat for about a minute.
  5. Remove the casing from the Italian sausage and crumble it into the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  6. Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  7. Carefully pour in the chicken broth, scraping the bottom of the skillet to deglaze. Bring to a gentle simmer.
  8. Reduce the heat to low and stir in the heavy cream, mixing well.
  9. Gradually add the grated Parmesan cheese, stirring continuously until melted and creamy. If too thick, add reserved pasta water to reach desired consistency.
  10. Add Italian seasoning, and season with salt and pepper to taste. Add red pepper flakes if desired.
  11. Gently add the drained fettuccine to the skillet and toss until well coated. Adjust sauce thickness with reserved pasta water if needed.
  12. Taste the pasta and adjust seasoning as necessary.
  13. Using tongs, twirl the fettuccine onto plates or into bowls, ensuring each serving has sauce and sausage.
  14. Sprinkle with freshly chopped parsley and additional Parmesan cheese if desired.
