Ingredients
-
1 cup orzo pasta
-
2 tablespoons butter
-
2 tablespoons olive oil
-
8 oz mushrooms, sliced (button or cremini)
-
3 cups baby spinach
-
3 cloves garlic, minced
-
2 ½ cups vegetable broth (or chicken broth)
-
½ cup heavy cream
-
½ cup grated Parmesan cheese
-
Salt and black pepper, to taste
-
Fresh parsley, for garnish (optional)
Instructions
-
Heat butter and olive oil in a large skillet over medium heat.
-
Add mushrooms and sauté until golden brown and tender, about 6–8 minutes.
-
Stir in garlic and cook for another 1 minute until fragrant.
-
Add the orzo and toast it lightly for 2 minutes, stirring often.
-
Pour in the broth, bring to a simmer, cover, and cook for 8–10 minutes, stirring occasionally.
-
Once the orzo is tender, stir in the heavy cream, Parmesan cheese, and spinach.
-
Cook for another 2–3 minutes, until the spinach wilts and the sauce thickens.
-
Season with salt and pepper to taste.
-
Garnish with parsley and extra Parmesan, and serve hot!
Notes
-
Toasting the orzo adds a nutty depth of flavor—don’t skip it!
-
If the sauce becomes too thick, add a splash of broth to loosen it.
-
Swap spinach for kale or arugula for a twist.
-
Perfect as a main dish or a hearty side with proteins like chicken or salmon!
