  • 1 cup orzo pasta

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 8 oz mushrooms, sliced (button or cremini)

  • 3 cups baby spinach

  • 3 cloves garlic, minced

  • 2 ½ cups vegetable broth (or chicken broth)

  • ½ cup heavy cream

  • ½ cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • Fresh parsley, for garnish (optional)


Instructions

  1. Heat butter and olive oil in a large skillet over medium heat.

  2. Add mushrooms and sauté until golden brown and tender, about 6–8 minutes.

  3. Stir in garlic and cook for another 1 minute until fragrant.

  4. Add the orzo and toast it lightly for 2 minutes, stirring often.

  5. Pour in the broth, bring to a simmer, cover, and cook for 8–10 minutes, stirring occasionally.

  6. Once the orzo is tender, stir in the heavy cream, Parmesan cheese, and spinach.

  7. Cook for another 2–3 minutes, until the spinach wilts and the sauce thickens.

  8. Season with salt and pepper to taste.

  9. Garnish with parsley and extra Parmesan, and serve hot!

Notes

  • Toasting the orzo adds a nutty depth of flavor—don’t skip it!

  • If the sauce becomes too thick, add a splash of broth to loosen it.
