Ingredients

  • Bone-in, skin-on chicken thighs
  • Beef bacon
  • Fresh spinach
  • Cremini mushrooms
  • Heavy cream

Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. In a large, heavy-bottomed pot, heat a tablespoon of oil over medium heat. Add the beef bacon and cook until it’s crispy. Remove it from the pot and set aside, leaving the drippings.
  3. In the same pot, add the seasoned chicken thighs, skin-side down. Sear for about 5-7 minutes until the skin is golden brown. Flip and brown the other side for another 5 minutes. Remove the chicken and set aside.
  4. In the leftover drippings, add diced onion and minced garlic. Sauté until they are soft and fragrant, about 3-4 minutes.
  5. Add the sliced cremini mushrooms to the pot. Cook until they are browned and have released their moisture, about 5 minutes.
  6. Stir in the heavy cream, and add the chicken broth. Bring the mixture to a gentle simmer.
  7. Place the browned chicken thighs back into the pot, along with the cooked bacon. Cover and let it simmer on low heat for about 30-35 minutes, or until the chicken is cooked through and tender.
  8. In the last 5 minutes of cooking, stir in the fresh spinach.
  9. Once everything is cooked, taste and adjust seasoning as needed. Serve hot, garnished with additional black pepper or fresh herbs if desired.
