- Bone-in, skin-on chicken thighs
- Beef bacon
- Fresh spinach
- Cremini mushrooms
- Heavy cream

Instructions
- Season the chicken thighs generously with salt and pepper.
- In a large, heavy-bottomed pot, heat a tablespoon of oil over medium heat. Add the beef bacon and cook until it’s crispy. Remove it from the pot and set aside, leaving the drippings.
- In the same pot, add the seasoned chicken thighs, skin-side down. Sear for about 5-7 minutes until the skin is golden brown. Flip and brown the other side for another 5 minutes. Remove the chicken and set aside.
- In the leftover drippings, add diced onion and minced garlic. Sauté until they are soft and fragrant, about 3-4 minutes.
- Add the sliced cremini mushrooms to the pot. Cook until they are browned and have released their moisture, about 5 minutes.
- Stir in the heavy cream, and add the chicken broth. Bring the mixture to a gentle simmer.
- Place the browned chicken thighs back into the pot, along with the cooked bacon. Cover and let it simmer on low heat for about 30-35 minutes, or until the chicken is cooked through and tender.
- In the last 5 minutes of cooking, stir in the fresh spinach.
- Once everything is cooked, taste and adjust seasoning as needed. Serve hot, garnished with additional black pepper or fresh herbs if desired.
