  • 1 cup heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Fill a large pot with water and bring it to a rolling boil. Add a generous pinch of salt.
  2. Add the fettuccine pasta to the boiling water and cook according to package instructions (8-10 minutes) until al dente. Stir occasionally to prevent sticking.
  3. Reserve about 1 cup of pasta water, then drain the rest. Drizzle a little olive oil over the pasta to prevent sticking and set aside.
  4. Season the sirloin steak strips with salt, pepper, and Italian seasoning.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot.
  6. Add the seasoned steak strips in a single layer. Sear for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from skillet and set aside.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in 1 cup of beef broth, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes to reduce slightly.
  9. Slowly add 1 cup of heavy cream, stirring continuously until it comes to a gentle simmer.
  10. Gradually stir in 1 cup of grated Parmesan cheese until fully melted and the sauce is creamy. Adjust thickness with reserved pasta water if needed.
  11. Taste and adjust seasoning with more salt, pepper, or Italian seasoning as desired.
  12. Add the cooked steak back into the skillet, stirring to coat evenly with the sauce.
  13. Add the drained fettuccine to the skillet and toss gently to coat. Add reserved pasta water if the mixture seems dry.
  14. Remove from heat and serve in bowls, garnished with freshly chopped parsley.
