Instructions

  1. Start by dicing your chicken into bite-sized pieces. If you’re using rotisserie chicken, shred it and set it aside.
  2. In a large pot over medium heat, add a tablespoon of olive oil. Once heated, add diced onions and minced garlic. Sauté for about 3-4 minutes until the onions are translucent.
  3. Toss in the chopped chicken (or shredded rotisserie chicken) and cook until no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth and bring the mixture to a gentle boil.
  5. Stir in your broken lasagna noodles. Cook according to package instructions until al dente, usually around 8-10 minutes.
