- 4 boneless, skinless chicken breasts
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Place chicken breasts on a cutting board. If thick, butterfly or pound to an even thickness of about 1 inch.
- Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
- In one bowl, pour ranch dressing. In another bowl, mix panko breadcrumbs with half of the crumbled bacon and half of the shredded cheddar cheese.
- Coat each chicken breast in ranch dressing, letting excess drip off.
- Press each chicken breast into the breadcrumb mixture, ensuring even coating on both sides.
- Continue until all chicken breasts are coated.
- Line a baking sheet with parchment paper or grease it with olive oil.
- Place coated chicken breasts on the baking sheet, spaced evenly.
- Lightly drizzle olive oil over the chicken.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the coating is golden brown.
- About 5 minutes before done, sprinkle remaining cheese and bacon on top. Return to oven for 5 minutes until cheese is melted.
- Let the chicken rest for a few minutes, then sprinkle with chopped parsley before serving.
- Plate the chicken and enjoy with sides like roasted vegetables, salad, or mashed potatoes.
