  • 4 boneless, skinless chicken breasts
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts on a cutting board. If thick, butterfly or pound to an even thickness of about 1 inch.
  3. Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  4. In one bowl, pour ranch dressing. In another bowl, mix panko breadcrumbs with half of the crumbled bacon and half of the shredded cheddar cheese.
  5. Coat each chicken breast in ranch dressing, letting excess drip off.
  6. Press each chicken breast into the breadcrumb mixture, ensuring even coating on both sides.
  7. Continue until all chicken breasts are coated.
  8. Line a baking sheet with parchment paper or grease it with olive oil.
  9. Place coated chicken breasts on the baking sheet, spaced evenly.
  10. Lightly drizzle olive oil over the chicken.
  11. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the coating is golden brown.
  12. About 5 minutes before done, sprinkle remaining cheese and bacon on top. Return to oven for 5 minutes until cheese is melted.
  13. Let the chicken rest for a few minutes, then sprinkle with chopped parsley before serving.
  14. Plate the chicken and enjoy with sides like roasted vegetables, salad, or mashed potatoes.
