- Boneless, skinless chicken breasts
- Whole dill pickles or dill pickle slices
- Freshly grated parmesan cheese
- Panko breadcrumbs
- Eggs
- Garlic powder
- Onion powder
- Salt
- Pepper
- Paprika or cayenne pepper (optional)
- Dill pickle juice
Instructions
- Preheat your oven to 400°F (200°C).
- While the oven is heating, take your chicken breasts and place them between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness, about 1 inch.
- In a bowl, pour some dill pickle juice (enough to cover the chicken). Let the chicken marinate for at least 30 minutes.
- In three shallow bowls, set up your breading station. In the first bowl, whisk together the eggs. In the second bowl, mix the panko breadcrumbs, grated parmesan, garlic powder, onion powder, salt, and pepper. The third bowl can be reserved for any extra seasoning if desired.
- Remove the chicken from the pickle juice and let the excess drip off. Dip each piece into the egg mixture, letting the excess drip back into the bowl. Then, coat it in the breadcrumb mixture, pressing down to ensure a good coating.
- Place the breaded chicken breasts on a greased baking sheet or a wire rack set over a baking sheet.
- Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the coating is golden brown.
- Once done, let the chicken rest for a few minutes before serving. Serve with extra dill pickles on the side.
