- ½ cup cornstarch
- 1 teaspoon garlic powder

- Pinch of cayenne pepper
- 1 cup cold water or sparkling water
- 1 cup panko breadcrumbs
- Vegetable oil or canola oil (for frying)
- Peanut oil (optional, for frying)
Instructions
- Start by peeling the onions and slicing them into thin rings, about ¼ inch thick.
- Gently separate the rings from each other, placing them in a bowl.
- In a mixing bowl, combine 1 cup of all-purpose flour, ½ cup of cornstarch, and your chosen spices (about 1 teaspoon each of garlic powder and paprika, plus a pinch of cayenne). Mix well.
- Gradually add 1 cup of cold water or sparkling water to the flour mixture, stirring until you achieve a smooth batter.
- In another bowl, place 1 cup of panko breadcrumbs. You can add some extra spices here if you want more flavor.
- Dip each onion ring into the batter, making sure it's fully coated, then press it into the panko breadcrumbs. Place the coated rings on a plate or baking sheet until you’re ready to fry.
- In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C).
- Carefully drop a few onion rings into the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes or until they turn golden brown, flipping them halfway through for even cooking.
- Once they’re golden and crispy, remove the onion rings with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
