Description

This Blueberry Peach Cobbler is a warm and comforting dessert featuring a delicious blend of fresh or frozen blueberries and peaches, topped with a crumbly oat mixture. Easy to make in a crockpot, it’s perfect for any occasion and is sure to delight your family and friends!

Ingredients

Scale
  • 4 cups fresh or frozen blueberries
  • 4 cups fresh or frozen peaches, sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. In a large mixing bowl, combine the blueberries and sliced peaches. If using frozen fruit, no need to thaw.
  2. Add granulated sugar, lemon juice, vanilla extract, ground cinnamon, and salt. Gently toss until the fruit is well coated.
  3. Transfer the fruit mixture into the bottom of your crockpot, spreading it out evenly.
  4. In a separate bowl, combine all-purpose flour, rolled oats, brown sugar, and baking powder. Stir until well mixed.
  5. Pour in melted butter and milk. Optionally, add almond extract. Mix until just combined; a few lumps are fine.
  6. Spoon the topping over the fruit mixture in the crockpot.
  7. Cover the crockpot and set it to cook on low for 4 to 6 hours. Check around the 4-hour mark.
  8. Optionally, remove the lid during the last hour to thicken the cobbler.
  9. The cobbler is done when the fruit is bubbly and the topping is golden brown. A toothpick inserted should come out clean.
  10. Scoop out portions of the cobbler, ensuring to get both fruit and topping.
  11. Serve warm in bowls, optionally topped with vanilla ice cream or whipped cream.
  12. For an extra touch, sprinkle with cinnamon or drizzle caramel sauce before serving.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
  • Feel free to mix in other fruits like raspberries or blackberries for a different flavor profile.
