Ingredients

  • 2 large English cucumbers (or 56 Persian cucumbers), thinly sliced

  • ½ cup crumbled feta cheese

  • 2 tbsp fresh dill, chopped

  • 2 tbsp fresh parsley, chopped

  • Juice of 1 lemon

  • 2 tbsp extra virgin olive oil

  • Salt and pepper, to taste

  • Optional: ¼ small red onion, thinly sliced

  • Optional: 1 tsp honey or pinch of sugar (if cucumbers are extra tangy)


Instructions

  • Slice the Veggies: Thinly slice cucumbers and red onion (if using). Place in a large mixing bowl.

  • Make the Dressing: In a small bowl, whisk together lemon juice, olive oil, salt, pepper, and optional honey.

 

  • Toss & Serve: Add feta, dill, and parsley to the cucumber bowl. Pour dressing over the top and toss gently to combine. Taste and adjust seasoning. Serve immediately or chill for 10–15 minutes for extra flavor.

Notes

  • For crunchier cucumbers, salt them and let sit for 10 minutes, then drain excess liquid before dressing.

  • Use Persian cucumbers for a sweeter, crisper bite.

  • Swap in mint or basil for a fresh twist on the herbs.

  • Add cherry tomatoes, olives, or avocado to bulk it up.
