- 2 tablespoons cornstarch
- 8 flour tortillas (6-inch)

Instructions
- Start by preparing your apples. Peel, core, and chop 5 medium apples into ¼-inch cubes.
- In a large saucepan, combine the chopped apples with 1/3 cup packed brown sugar, 2 tablespoons granulated sugar, 2 teaspoons ground cinnamon, 1 teaspoon fresh lemon juice, and 1 cup water. Stir well to coat the apples in the sugars and spices.
- Place the saucepan over medium heat and cook the apple mixture for about 10-12 minutes, stirring occasionally.
- While the apples are cooking, mix 2 tablespoons cornstarch with 2 tablespoons of water in a small bowl to create a slurry.
- Once the apples are tender, add the cornstarch slurry to the saucepan. Stir well and continue cooking for another 2-3 minutes, or until the mixture thickens and bubbles.
- While the apple filling cools slightly, prepare the cinnamon sugar tortilla chips. Preheat your oven to 350°F (175°C).
- Cut the 8 flour tortillas into triangles and arrange them on a baking sheet. Spray lightly with non-stick cooking spray.
- In a small bowl, mix 1/3 cup granulated sugar with 1 ½ teaspoons ground cinnamon. Sprinkle this mixture generously over the tortilla triangles.
- Bake the tortilla chips in the preheated oven for about 10-12 minutes, or until they are crispy and lightly golden.
- Once the chips are out of the oven, let them cool for a few minutes. In the meantime, transfer the warm apple pie filling to a serving bowl.
- Serve the Apple Pie Dip warm, alongside the cinnamon sugar tortilla chips.
