  • Author: Ava
  • Total Time: 45 minutes
  • Yield: 4 servings

Description

These Baked Cabbage Lentil Veggie Burgers are a hearty and nutritious alternative to traditional beef burgers, packed with flavor and texture. Perfect for a quick weeknight dinner or a fun weekend barbecue, they are sure to impress everyone!

Ingredients

  • Green cabbage (or savoy or red cabbage)
  • Cooked green or brown lentils (or canned lentils)
  • Rolled oats (or certified gluten-free oats)
  • Onion
  • Garlic
  • Cumin
  • Paprika
  • Egg (or flax egg made from 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures that your burgers will bake evenly.
  2. Prepare the Cabbage: Chop your cabbage finely. You can use a knife or a food processor for this task. The smaller the pieces, the better they will incorporate into the mixture.
  3. Cook the Lentils: If using dried lentils, rinse them under cold water, then cook them in a pot with 2 cups of water until tender, about 20-25 minutes. If using canned lentils, simply drain and rinse them, and set aside.
  4. Sauté Aromatics: In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until translucent and fragrant, about 3-4 minutes.
  5. Mix Ingredients: In a large mixing bowl, combine the cooked lentils, sautéed onions and garlic, chopped cabbage, oats, spices, and salt and pepper. If using, add your egg or flax egg at this stage. Mix well until everything is combined.
  6. Shape the Burgers: With clean hands, take a handful of the mixture and form it into patties. Aim for about 3-4 inches in diameter and about 1 inch thick. Place the patties on a parchment-lined baking sheet.
  7. Bake the Burgers: Bake in the preheated oven for 25-30 minutes, flipping halfway through. The burgers should be golden brown and firm to the touch when done.
  8. Serve: Once baked, remove the burgers from the oven and let them cool for a few minutes. Serve them on whole-grain buns or lettuce wraps with your favorite toppings and sauces!
