- 2 cups cooked shredded chicken (preferably rotisserie)
- 1/2 cup BBQ sauce (your favorite type)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas (or corn tortillas for gluten-free)
- 1 cup diced bell peppers
- 1 cup diced onions
- Oil for sautéing
Instructions
- In a bowl, combine the shredded chicken with about 1/2 cup of BBQ sauce. Mix well until the chicken is fully coated. Adjust the amount of sauce to your taste.
- In a skillet over medium heat, add a drizzle of oil. Sauté diced bell peppers and onions until they are soft and slightly caramelized, about 5-7 minutes. Remove from heat and set aside.
- Heat a clean skillet over medium heat. Lay a tortilla flat and sprinkle a generous amount of cheese on one half. Top with a portion of the BBQ chicken mixture and some sautéed vegetables. Add a little more cheese on top before folding the tortilla over.
- Place the filled tortilla in the skillet. Cook for about 3-4 minutes on one side, or until golden and crispy. Carefully flip it over and cook for another 3-4 minutes until the cheese is melted and the other side is crispy.
- Once cooked, transfer the quesadilla to a cutting board and let it cool for a minute. Slice into wedges and serve with extra BBQ sauce, sour cream, or guacamole on the side.
