Ingredients
- Beef bacon
- Fresh corn off the cob (or frozen/canned corn)

- Apple cider vinegar (or white wine vinegar/red wine vinegar)

Instructions
- Cook the Beef Bacon: Place your beef bacon slices in a cold skillet over medium heat. Cook until it’s beautifully crispy and golden brown, flipping occasionally, about 8-12 minutes. Transfer the crispy bacon to a plate lined with paper towels to drain off any excess fat. Once cooled slightly, chop it into bite-sized pieces.
- Prepare the Corn: If using fresh corn, cut the kernels off the cob and sauté them in a dry skillet or a tiny bit of reserved bacon fat over medium-high heat for 3-5 minutes until lightly charred and tender-crisp. If using frozen corn, thaw it completely and pat it dry, then sauté as above. For canned corn, drain and rinse it thoroughly, then sauté briefly to get a little color. Set the prepared corn aside to cool.
- Chop the Vegetables: While the bacon and corn are cooling, wash and thoroughly dry your salad greens. Halve the cherry tomatoes and thinly slice the red onion. If using avocado, cube it right before assembling.
- Make the Dressing: In a small bowl or jar, whisk together the extra virgin olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and freshly ground black pepper. Whisk vigorously until well combined and emulsified. Taste and adjust seasonings as needed.
- Assemble the Salad: In a large salad bowl, combine your chosen salad greens, the cooled corn, halved cherry tomatoes, and thinly sliced red onion. Add the cubed avocado if using.
- Dress and Serve: Just before serving, drizzle the homemade vinaigrette over the salad. Add the crispy chopped beef bacon pieces and toss everything gently to ensure all ingredients are coated in the dressing. Serve immediately and enjoy!
