Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together 1 cup of unsalted butter and 1 cup of brown sugar until light and fluffy, about 3-4 minutes.
- Beat in 1 egg and 1 teaspoon of vanilla extract until fully incorporated.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually add this mixture to your wet ingredients, mixing until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Once chilled, roll the dough out on a lightly floured surface to about 1/4 inch thick. Cut into rectangles, about 3×4 inches each.
- Place the rectangles on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the edges are lightly golden. Allow them to cool completely on a wire rack.
- While the cookies cool, mix 1 cup of powdered sugar with 2 tablespoons of milk and a few drops of vanilla extract until smooth. If using food coloring, add it now.
- Once the cookies are cool, spread the icing on half of the cookies and place another cookie on top to create a sandwich.
