- 8 small corn or flour tortillas
- 2 cups shredded cheddar cheese (or Mexican blend cheese)

Instructions
- Preheat your oven to 350°F (175°C). This ensures your casserole will cook evenly and thoroughly, creating a bubbly, golden topping.
- In a large skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper to the skillet. Stir and cook for another 2 minutes until fragrant.
- Mix in the shredded chicken, black beans, corn, and half of the enchilada sauce. Stir until everything is well combined and heated through, about 3-4 minutes.
- In a 9×13-inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom.
- Layer 4 tortillas on top of the sauce, overlapping them slightly. Spoon half of the chicken and black bean mixture over the tortillas, then sprinkle with 1 cup of shredded cheese.
- Repeat the layering process with the remaining tortillas, the rest of the chicken mixture, and top with the remaining cheese.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it sit for 5-10 minutes before serving.
