Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan over low heat, melt 1/2 cup of unsalted butter for the brownie layer. Stir until completely melted and remove from heat.
- Add 1 cup of granulated sugar to the melted butter, mixing well until combined.
- Incorporate 2 large eggs one at a time, mixing vigorously after each addition.
- Stir in 1 teaspoon of vanilla extract, followed by 1/3 cup of unsweetened cocoa powder, 1/2 cup of all-purpose flour, 1/4 teaspoon of salt, and 1/4 teaspoon of baking powder. Mix until just combined.
- Pour the brownie batter into a greased or lined 8×8-inch baking pan.
- In a separate bowl, cream together 1/2 cup of softened unsalted butter, 1/4 cup of granulated sugar, and 1/2 cup of packed light brown sugar until fluffy.
- Add 1 teaspoon of vanilla extract and mix well. Gradually add in 1 cup of all-purpose flour and 1/2 teaspoon of salt, mixing until combined.
- Fold in 1/2 cup of mini chocolate chips.
- Spread the cookie dough layer over the brownie layer in the pan.
- Bake in the preheated oven for 20-25 minutes.
- Once baked, remove from the oven and let cool in the pan for at least 10 minutes before cutting into bite-sized pieces.
