  • 1/2 cup packed light brown sugar

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (or butter) for melting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over low heat, melt 1/2 cup of unsalted butter for the brownie layer. Stir until completely melted and remove from heat.
  3. Add 1 cup of granulated sugar to the melted butter, mixing well until combined.
  4. Incorporate 2 large eggs one at a time, mixing vigorously after each addition.
  5. Stir in 1 teaspoon of vanilla extract, followed by 1/3 cup of unsweetened cocoa powder, 1/2 cup of all-purpose flour, 1/4 teaspoon of salt, and 1/4 teaspoon of baking powder. Mix until just combined.
  6. Pour the brownie batter into a greased or lined 8×8-inch baking pan.
  7. In a separate bowl, cream together 1/2 cup of softened unsalted butter, 1/4 cup of granulated sugar, and 1/2 cup of packed light brown sugar until fluffy.
  8. Add 1 teaspoon of vanilla extract and mix well. Gradually add in 1 cup of all-purpose flour and 1/2 teaspoon of salt, mixing until combined.
  9. Fold in 1/2 cup of mini chocolate chips.
  10. Spread the cookie dough layer over the brownie layer in the pan.
  11. Bake in the preheated oven for 20-25 minutes.
  12. Once baked, remove from the oven and let cool in the pan for at least 10 minutes before cutting into bite-sized pieces.
