Instructions
- In a large mixing bowl, combine 2 cups of warm water with 2 teaspoons of active dry yeast and let it sit for about 5 minutes until frothy.
- Add 4 cups of all-purpose flour, 2 teaspoons of sea salt, and 1/4 cup of olive oil. Mix until a shaggy dough forms.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little flour as you knead.
- Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- After the dough has risen, punch it down and turn it out onto an oiled baking sheet. Gently stretch and press the dough into a rectangle or rectangle shape, about 1 inch thick.
- Cover the shaped dough with a cloth and let it rise again for about 30 minutes, allowing it to puff up nicely.
- Preheat your oven to 425°F (220°C). Dimple the surface of the dough with your fingers and drizzle with more olive oil.
- Add your chosen toppings – I love using rosemary, sliced cherry tomatoes, and olives for a festive look.
- Place the focaccia in the oven and bake for 20-25 minutes, or until golden brown.
