Instructions
- In a small bowl, combine 1 cup of warm milk (about 110°F) with 2 tablespoons of granulated sugar and 2 ¼ teaspoons of active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine 4 cups of all-purpose flour and ½ teaspoon of salt. Create a well in the center and add the yeast mixture, ¼ cup of melted butter, and 1 teaspoon of vanilla extract. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- In a bowl, mix 1 cup of brown sugar, 2 tablespoons of ground cinnamon, and ½ cup of softened butter (or coconut oil). Add ½ cup of coconut cream for a creamy filling and mix until combined.
- Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 16×24 inches).
- Spread the coconut cream filling evenly over the dough, leaving a small border around the edges.
- Starting from one long edge, tightly roll the dough into a log. Cut the log into 12 equal pieces and place them in a greased baking dish.
- Cover the rolls with a cloth and let them rise for another 30 minutes until puffy.
- Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown.
- While the rolls are baking, beat together 1 cup of coconut cream, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
