  • 1 lb 80/20 ground beef
  • 1 can sweet corn, drained
  • 1 package cheese tater tots
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt, to taste
  • Pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula for about 5-7 minutes.
  3. Add diced onions and bell peppers to the skillet and sauté for an additional 3-4 minutes until the vegetables are slightly softened.
  4. Stir in the canned corn (drained) and your chosen seasonings (garlic powder, chili powder, salt, and pepper). Mix everything well and let it heat through for another 2-3 minutes.
  5. Pour the beef and corn mixture into a greased 9×13 inch baking dish, spreading it evenly across the bottom.
  6. Layer the cheese tater tots evenly over the beef mixture.
  7. Sprinkle shredded cheddar and mozzarella cheese over the cheese tots, covering as much area as possible.
  8. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Once done, let the casserole cool for a few minutes before serving.
