- 2 tablespoons of butter
- 1 cup of chopped onions
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 2 cloves of minced garlic
- 4 cups of seafood stock (or chicken stock)
- 1 teaspoon of Old Bay seasoning
- Salt to taste
- Pepper to taste
- Cayenne pepper to taste
- 2 cups of crab meat
- 1 cup of heavy cream (or coconut milk)
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat. Add 1 cup of chopped onions, 1 cup of chopped carrots, and 1 cup of chopped celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in 2 cloves of minced garlic and cook for another minute until fragrant.
- Pour in 4 cups of seafood stock (or chicken stock) and bring to a boil. If you’re using white wine, add it here and let it simmer for about 2 minutes to cook off the alcohol.
- Add 1 teaspoon of Old Bay seasoning, salt, and pepper to taste. If you enjoy a bit of heat, sprinkle in some cayenne pepper. Stir well.
- Gently fold in 2 cups of crab meat and let the soup simmer for about 10 minutes. This allows the crab to absorb all the flavors.
- Reduce the heat to low and stir in 1 cup of heavy cream (or coconut milk). Heat through, but do not let it boil.
- Taste the soup and adjust the seasoning if necessary. You can add a bit more Old Bay or a squeeze of lemon juice for brightness.
