Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add 1 cup of chopped onions, 1 cup of chopped carrots, and 1 cup of chopped celery. Sauté until the vegetables are soft, about 5-7 minutes.
  2. Stir in 2 cloves of minced garlic and cook for another minute until fragrant.
  3. Pour in 4 cups of seafood stock (or chicken stock) and bring to a boil. If you’re using white wine, add it here and let it simmer for about 2 minutes to cook off the alcohol.
  4. Add 1 teaspoon of Old Bay seasoning, salt, and pepper to taste. If you enjoy a bit of heat, sprinkle in some cayenne pepper. Stir well.
  5. Gently fold in 2 cups of crab meat and let the soup simmer for about 10 minutes. This allows the crab to absorb all the flavors.
  6. Reduce the heat to low and stir in 1 cup of heavy cream (or coconut milk). Heat through, but do not let it boil.
