Instructions

  1. Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes until they turn bright red. Remove from the pot and let them cool.
  2. Once the lobsters are cool enough to handle, carefully remove the meat from the claws and tails. Chop the meat into bite-sized pieces, and set aside. Save the shells for later use.
  3. In a large skillet, melt 3 tablespoons of butter over medium heat. Add finely chopped shallots and cook until they are translucent, about 2-3 minutes.
  4. Stir in the chopped lobster meat and cook for an additional 2 minutes. Remove from heat and set aside.
  5. In the same skillet, melt another tablespoon of butter. Whisk in 2 tablespoons of flour, cooking for 1-2 minutes until it forms a roux. Gradually whisk in 1 cup of heavy cream and bring to a gentle simmer. Stir in the mustard, salt, and pepper, and cook until the sauce thickens, around 5 minutes.
  6. Add the lobster meat to the sauce, mixing well. Spoon the mixture back into the reserved lobster shells.
  7. Preheat your broiler. In a small bowl, mix the breadcrumbs with the remaining melted butter and grated cheese. Sprinkle this mixture generously over the filled lobster shells.
  8. Place the stuffed lobster shells on a baking sheet and broil for 3-5 minutes, or until the top is golden and bubbly. Keep a close eye to prevent burning.
