- Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes until they turn bright red. Remove from the pot and let them cool.
- Once the lobsters are cool enough to handle, carefully remove the meat from the claws and tails. Chop the meat into bite-sized pieces, and set aside. Save the shells for later use.
- In a large skillet, melt 3 tablespoons of butter over medium heat. Add finely chopped shallots and cook until they are translucent, about 2-3 minutes.

- Add the lobster meat to the sauce, mixing well. Spoon the mixture back into the reserved lobster shells.
- Preheat your broiler. In a small bowl, mix the breadcrumbs with the remaining melted butter and grated cheese. Sprinkle this mixture generously over the filled lobster shells.
- Place the stuffed lobster shells on a baking sheet and broil for 3-5 minutes, or until the top is golden and bubbly. Keep a close eye to prevent burning.
