  • Author: Ava
  • Total Time: 45 minutes
  • Yield: 4 servings

Description

This French Onion Chicken Rice Bake combines the rich, savory flavors of classic French onion soup with tender chicken and fluffy rice, all baked to perfection. It’s a comforting all-in-one meal that’s easy to prepare and sure to impress.

Ingredients

  • Boneless, skinless chicken breasts
  • Long-grain white rice
  • Sweet onions (like Vidalia or yellow onions)
  • Beef broth
  • Gruyère cheese (or Swiss cheese or mozzarella)
  • Fresh thyme (or dried thyme)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add sliced onions and sauté them for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
  3. While the onions are cooking, season your chicken breasts with salt, pepper, and thyme. In a separate pan, sear the chicken over medium-high heat for about 3-4 minutes on each side until golden but not fully cooked through.
  4. In a large mixing bowl, combine the uncooked rice, caramelized onions, half of the cheese, and beef broth. Stir well to combine.
  5. Spread the rice mixture evenly in a greased 9×13 inch baking dish. Nestle the seared chicken breasts on top of the rice mixture.
  6. Pour any remaining beef broth over the chicken and rice, ensuring everything is moistened.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 15-20 minutes or until the chicken is cooked through and the cheese is bubbling and golden.
  8. Let the dish rest for about 5 minutes before serving.

Keywords: Caramelization is key; don’t rush the onion cooking process. You can cook the chicken directly in the same skillet after the onions to save on dishes. Feel free to experiment with different cheeses for extra flavor.
