This French Onion Potato Bake features layers of tender potatoes, caramelized onions, and gooey cheese, creating a comforting dish that elevates any meal. It’s easy to prepare and perfect for cozy nights in or impressing guests.
Ingredients
- Yukon Gold or Russet potatoes
- Sweet onions
- Gruyère cheese or a good melting cheese like mozzarella or sharp cheddar
- Beef broth or vegetable broth or chicken broth
- Fresh thyme or dried thyme, rosemary, or Italian seasoning
- Heavy cream or half-and-half or non-dairy cream substitute
- Butter or olive oil or vegan butter alternative
Instructions
- Preheat the oven: Start by preheating your oven to 375°F (190°C).
- Prepare the onions: Slice your sweet onions thinly. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the onions and a pinch of salt. Cook slowly for about 20-25 minutes, stirring occasionally, until the onions are caramelized and golden brown.
- Prepare the potatoes: While the onions are cooking, peel and thinly slice your potatoes (about 1/8 inch thick). You can use a mandoline for even slices if you have one.
- Layer the ingredients: In a greased baking dish, layer half of the sliced potatoes at the bottom. Spread half of the caramelized onions on top, sprinkle with half of the cheese, and season with salt, pepper, and thyme. Repeat the layers with the remaining potatoes, onions, and cheese.
- Mix the cream and broth: In a separate bowl, combine the heavy cream and beef broth. Pour this mixture evenly over the layered potatoes and onions. Make sure the liquid seeps through the layers.
- Cover and bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 45 minutes.
- Finish baking: After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and bubbly.
- Cool and serve: Allow the dish to cool for a few minutes before serving. This will help the layers set a bit and make it easier to serve.

Keywords: Take your time with the onions for deeper caramelization. Ensure even distribution of ingredients when layering for balanced flavor. Feel free to mix cheeses for added flavor and consider adding cooked bacon or sautéed mushrooms for extra depth.
