Instructions

  1. In a medium bowl, combine 2 cups of all-purpose flour, 1 Tbsp. baking powder, and 1 tsp. salt. Whisk together until evenly mixed.
  2. Add 1 cup of hot water to the dry ingredients. Mix with your hands until a dough forms. The dough should feel slightly sticky but manageable. If it’s too dry, add a little more water, one tablespoon at a time.
  3. Cover the dough with a clean kitchen towel and let it rest for 10 minutes. This resting period allows the gluten to relax, making it easier to roll out.
  4. While the dough is resting, heat 1-2 inches of vegetable oil in a medium skillet over medium-high heat. Use a thermometer to check that the oil reaches 350°F.
  5. After the dough has rested, break off golf ball-sized pieces of dough and roll each into a ball. Aim for about 12 balls total.
  6. On a floured surface, take each ball and roll it out into a circle about 6-7 inches in diameter. Make sure to keep the dough floured to prevent sticking.
