Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with non-stick spray.
- In a large mixing bowl, combine 1 cup of pumpkin puree, ½ cup of maple syrup, ½ cup of melted butter, and 2 large eggs. Whisk until smooth.
- In another bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and 1 teaspoon of ground cinnamon. Add ½ teaspoon of ground nutmeg and ¼ teaspoon of ground ginger.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
- In a small bowl, mix together ½ cup of all-purpose flour, ⅓ cup of brown sugar, ¼ teaspoon of cinnamon, and ¼ cup of cold butter. Use a fork or your fingers to crumble the mixture until it resembles coarse crumbs.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle a generous amount of the streusel topping over each muffin.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
