Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine 3 egg whites and beat them until stiff peaks form.
- In another bowl, mix together 3 egg yolks and 1/2 cup of cream cheese until smooth.
- Fold the egg whites into the yolk mixture gently until fully combined.
- Spread the mixture onto a parchment-lined baking sheet to form rounds.
- Bake for 15-20 minutes until golden and fluffy.
- While the cloud bread is baking, cut 1 pound of boneless chicken breast into bite-sized pieces.
- Season the chicken with garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Once hot, add the seasoned chicken pieces and cook until they are no longer pink and have a nice golden color, about 5-7 minutes.
- Stir in 1/2 cup of grated Parmesan cheese, allowing it to melt into the chicken.
- Once the cloud bread is ready and the chicken mixture is cooked, assemble the bombs by placing a generous spoonful of the chicken mixture onto each cloud round.
- Use the edges of the cloud bread to fold over the filling, creating a little pouch.
- Return the assembled Chicken Bombs to the oven for an additional 10 minutes.
- Remove from the oven and let them cool slightly before serving.
- Sprinkle additional Parmesan cheese or fresh herbs on top for extra flavor.
